FEED A CROWD ..MAKE AHEAD AND BAKE..WARM HEART AND HEARTH IN COLD WEATHER ..RECIPE : EGGS AND SAUSAGE CASSEROLE


This is something very 70's, yet comes in very handy for feeding a crowd..and by making ahead, can save you time..baking also helps heat the home.
This recipe can prepared as individual casseroles or  in 2x 8 inch foil trays and frozen for baking later on.
This recipe feeds 6-8.
It reminds me of a pastry-less quiche..so go ahead and use whatever you prefer in it.
The recipe may be halved or doubled without any loss of integrity of flavors/texture.

You may supplement the meat with tempeh, cooked vegetables or cooked beans too.


8 cups fresh bread in 1/2 inch cubes
1 pound fully cooked sausage meat  (may inc. chicken or even "Vegetarian")
2 1/2 cups milk (can be nut milk)
4 large eggs whisked
1 tbsp Dijon mustard
1/2 cup plain yogurt
2 cups any cream soup (Canned OK, but not condensed) 
2 tbsp fresh herbs of choice ( depends on filling and cream soup used)
2 cups Grated cheese
PREHEAT OVEN 350F


in lightly buttered ovenproof coffee mugs -divide the bread cubes (or custard cups or 8inch foil trays or a 13 x 9 x 2inch ovenproof baking dish)
in a large bowl whisk the eggs with the milk, cooked sausage and mustard, and pour over the bread

In another bowl mix the soup with the yogurt, whisk well then add to the bread custard mix.
Top with grated cheese and for individual cups 1/2 tsp butter
For 8x8 and large pans add 1 cup butter chunked

For individual..place mugs on a cookie sheet and bake  25-30 mins until set and puffed.
For large containers bake 350F for 1 hour until set and puffy

to Freeze:

uncooked casseroles Individual wrap  well in plastic wrap, foil then individually in sealed plastic freezer bag for up to 1 month..thaw overnight in fridge before baking

Do the same with the larger pans a 13 x 2 x 9inch may have to thaw in fridge for 2 days.


By all means make it your own but keep the ratio of liquid to dry , the same.
Also ensure that the dishes thaw out in the fridge not your kitchen counter overnight, and that you oven is preheated.
DO NOT MICROWAVE THIS DISH..with the eggs it will explode before it is fully cooked.


VARIATIONS:
it may be made lower calorie by using reduced calorie soup, milk, margarine, and just egg whites..or extra special by replacing the yogurt with cream..it is up to you...make it global and just enjoy the GOOD LIFE.
