"GOURMET" TURKEY & MUSHROOM SLOPPY JOE'S..RECIPE





Sloppy Joe's are traditionally made with ground beef in a tomato sauce and is served on soft bread rolls...this is somewhat different!


This feeds 6-8


and should be accompanied with potato chips or French Fries & ice cold beers

French or Rustic Breads/rolls

2 pounds ground turkey (a 50:50 mix of dark and white)

1 1/2 cups  finely chopped onion
1 cup finely sliced celery
1 cup starchy potatoes cut in 1/4 dice
2 cups sliced mushrooms
3tbsp butter

Melt the butter and add the vegetables and saute for 10 mins to sweat them down. Using a slotted spoon remove the vegetables and set aside.
Cook the turkey in batches(browning the meat then removing and reserving with the vegetables) in the hot butter and when all is cooked add the vegetables nad the following:
1 cup dry white wine (or apple juice)
1 tbsp Worcestershire sauce
4 cups chicken stock
1 cup sweetcorn
2 tbsp cornstarch

Cook to boiling then turn down to medium simmer, stirring occasionally and cook for 40 mins until half of liquid has evaporated & the turkey is cooked (tender).

Mix cornstarch with cold water/cold milk and add to
the mix and bring to boil to thicken slightly.

Add:
 1/2 cup brandy( optional)
1 cup sour cream, 
and simmer on low for  a further 20 mins.

Then add
1/2 cup minced parsley
1/4 tsp ground nutmeg
Check seasonings adding salt & ground pepper.

Toast some thick (1 inch +) slices of French Bread or Rustic bread rolls

Place the toasted bread on warm plates and pour over the turkey-mushroom sauce, and serve immediately...offering napkins and either  hot fresh fries of potato chips

Variations:
for something "OVER THE TOP"..serve this on garlic bread.


use good wild mushrooms, also sliced.

Or add green peas , chopped carrots, chickpeas, any vegetables chopped small.
