Vegan corn meal polenta with onions, scallion and chickpeas, to be drizzled with olive oil and grilled or fried in a skillet

Roasted beets and potatoes..roast dense vegetables first as they take longer..and as they are heavier than softer vegetables, roast them in batches

Roasted orange bell peppers, zucchini, onions, mushrooms and grape tomatoes..drizzled with pomegranate molasses or try marmalade and hot water..the drizzle has to be sweet and sour to cut the grease

Steam-fried beans, blanch in boiling water with 1/4 tsp baking soda. drain and rinse in cold water, saute garlic in olive oil, add the beans and saute for 4 mins, then add 1 cup boiling water and coarse sea salt. Remove from heat, and sprinkle with crushed black pepper
