BRAZILIAN STYLE STEAK WITH SQUASH AND ORANGE SLAW


Now this IS a great and refreshing salad, and nutritional packed!!

For 4 servings you will need:

2 cups grated/shredded zucchini
2 cups grated/shredded yellow fleshed squash ( butternut, acorn & etc.)
2 cups shredded green or red cabbage very finely shredded
 1 cup fresh orange juice
2tsp salt
1/2 cup olive oil
2 tsp cider vinegar
1 tsp freshly grated nutmeg
1/4 cup shredded scallions
1/2 cup minced parsley/cilantro
1 ripe bell pepper rough chopped
1 medium apple
1 pound lean steak, fat trimmed
1/2 cup chopped Brazil nuts (or other raw nut)
1/2 cup minced celery
Mix all the vegetables in a bowl
Core and roughly chop the apple and add to orange juice to avoid discoloring.
Grill the steak to your preference, remove from grill, then sprinkle with the cider vinegar & allow to cool.
When cold slice very thin.

Mix the olive oil, fruit juice, & grated nutmeg in a jelly jar and shake to combine, dress the vegetables ( adding the orange soaked apple) with half of dressing and allow to macerate (soak) for 20 mins (flavors to develop).
Plate and top with steak slices and chopped nuts.






variations:
 add any seasonal fruit, chopped.
Replace steak with grilled fish/shellfish/or even grated cheese-cooked eggs

Add any spice/citrus of choice and or fresh herbs.
The citrus used has to be freshly squeezed
